Gluten-free Best Ever Eggplant Parmesan

Yum, Yum YUM! This really is the best EVER eggplant Parmesan and if you don’t believe me then you will just have to try it (hint hint, challenge, challenge!).  Now, I do think there is a reason why this is the best ever and I am going to reveal that to you know. A couple months ago I entered to win a contest on Spicy RD’s blog, in turn of entering her contest I unwilling won a give-a-way on Tall Papa’s twitter page (this is actually his website!) and received 2 packages of gluten-free bread crumbs.

This particular blend is the Italian Seasoned bread crumbs. Now listen to this list of ingredients; flax seeds, sesame seeds, pumpkin seeds, sunflower seeds, parsley, pepper, garlic, Romano cheese. Did you hear that?? Pretty impressive list of ingredients,  even for the gluten eater!

Oven baked and full of nothing but healing ingredients, eat it because it is delicious and enjoy it because you know you are doing something great for your body.

Now on with the recipe!

Best Ever Eggplant Parmesan

1 eggplant cut into 1/4″ slices (unpeeled, the good stuff is in the skin!)

1 -2 cups of seasoned breadcrumbs*

1/4 cup Parmesan cheese

4 egg whites, beaten

1 can Rotel (or can of seasoned diced tomatoes)

1 small red onion, diced

3 cloves garlic, minced

1- 3 tsp olive oil

*Note, my breadcrumbs were nicely seasoned, if yours are not consider adding oregano, Italian seasoning, paprika and garlic.

Preheat oven to 400 degrees. Coat baking pan with 1-2 tsp of olive oil.  Mix together bread crumbs and Parmesan cheese, set a side.  Dip sliced eggplant into egg whites and then into bread crumb mix paying attention to coat sides,  place eggplant in oiled baking pan. Bake approximately 10 minutes on each side until golden brown.

While eggplant is baking, add 1 tsp olive oil to stove top saute pan. Cook onion and garlic until cooked through. Add Rotel and heat through. When eggplant is done, transfer to serving dish and top with tomato mixture.

Serve with green salad and/or pasta, gluten free or whole grain!  I eliminated the traditional cheese topping and oven baked it to keep it Manged!

I really do recommend Tall Papa’s bread crumb, it really does add a nice twist to those ‘breaded’ meals, it would make a nice stocking stuffer for someone. No, I am not getting commission! :)
